Our first home-cooked meal was Thursday night. It consisted of marinated chicken we bought at the store, fresh green beans, and a mixture of Mexican rice (from a package) and black beans. The rice and beans was a weak attempt to mimic what seems to be the national dish of Costa Rica: gallopinto ("guy' oh pin' toe"). It's a mix of rice and beans and spices. We - make that I - had it every morning for breakfast when we were at the hotel. It was always on the breakfast buffet.
This meal may not look like much but if you knew the bare minimum cooking utensils, pots, pans, ingredients etc. that we had to work with, it's an accomplishment. Tasted pretty good, too!
I'm looking forward to being able to use my own kitchen, once we find a place to rent. Until then, we'll do the best with what we have (and probably eat out often...).
